My Story with Pierogi

I started cooking as a kid, standing on a stool next to the kitchen counter. My great-grandmother, both grandmothers and my granddad taught me how to make pierogi – each with a different dough, a different filling and a different story behind it.

Our Family

I grew up in a modest home where pierogi were part of everyday life. Just like many traditional dishes around the world, they were born from simplicity – using what we had, stretching the budget and still putting something warm and comforting on the table.

Homemade Food​

Dough mixed by hand, filling seasoned “by feeling”, and long conversations while the water was boiling – that was my normal. Today in Madrid I do the same, using Polish products whenever I can so that the taste of my childhood stays as authentic as possible.

Authentic with a Twist

I respect tradition, but I also enjoy playing with it – serving pierogi as starters, main course and dessert. It’s a way to connect the simplicity of my home in Zamość with the vibrant, curious food culture of Madrid.

Meet The Chef

Piotr Dworak Sokolowski

I come from Zamość, a Renaissance “ideal city” in south-eastern Poland, where streets and squares were carefully designed to stay in harmony. Maybe that’s why I believe so strongly that cooking is also about balance – good ingredients, the right order of steps and the people you share the food with.

After years of living abroad I realised that pierogi are my own language. Through them I can talk about Poland, my family and the idea that simple, humble dishes can become something truly special. Los Pierogi is my way of sharing that story in Madrid.

A Modern Take on Tradition

The Concept

Los Pierogi is a mix of home-style cooking and live showcooking. I bring Polish ingredients to your kitchen and together we turn an ordinary evening into a little journey to Zamość and the flavours of Poland.

I’m not a restaurant or a classic catering service. I create intimate experiences where we fold, cook, eat and talk – the way my family used to do it, now recreated in the heart of Madrid.
